Chamomile, Lavender, Canella Bark and Corn Silk Tea with Sweet Corn Milk

This is a wonderfully-fragrant tea with a creative non-dairy milk made from sweet corn, a recipe by Chef Tim Byres.

The market garden at The Ecology Center is a wonderland of tea possibilities.

Yields 1 jar of loose-leaf tea

Serves 6-8

Dry Tea Ingredients
1 cupchamomile
2 tsplavender 
2 stickscinnamon 
1-2 tspcorn silk
Sweet Corn Milk Ingredients
1 quartrice milk
3sweet corns
2 tbspsugar
2 tbsphoney
1 tspsalt

Dry Tea Directions

Blend all the dry ingredients and store in a sealed container.

Sweet Corn Milk Directions

Cut the kernels off of the cob and place into a saucepan with the rice milk, sugar, and salt. Bring to a boil and simmer for 5 minutes. Turn the heat off, add the honey and mix. In a high-speed blender, blend the milk and corn together, then strain in a fine mesh sieve. Refrigerate the milk and use up within a week.
