The Ecology Center is thrilled to announce a pop-up brunch residency with Eilo’s Kitchen through August 2018. The partnership represents a shared love for — and belief in — fresh, local ingredients. Both The Ecology Center and Eilo’s Kitchen recognize the importance good food plays when it comes to our own health and that of the planet. In short: Eilo’s believes in eating real food and so do we.

Sunday Brunch Series

Elio’s Kitchen specializes in grain-free, gluten-free, vegetarian, and vegan food; making it ideal for anyone looking to eat more mindfully. They “micro-source” their food, getting fruits and vegetables from the independent farmer’s who are only a morning’s drive away. By sourcing local, they’ve stayed committed to impeccably fresh, quality ingredients — serving no “fake junk, or artificial anything.”

Armed with both professional and personal knowledge of the power of clean eating, Eilo’s was started by Aileen Kruidenier, a certified health coach. Together with her husband (and business partner) Chris, they’ve created a concept that is centered around their commitment to a delicious grain-free and organic way of life. Named after her grandmother Eilo, Aileen creates dishes that are inspired by her grandmother’s positivity and light; making food for people who are “hungry for life and getting the absolute most out of it.”

And you can clearly taste the love they put into their food, which is made by Community Table Accord member and 7x Green Feast chef, Chef Cathy McKnight. Cathy’s career started with her own catering company in the 90s, which utilized fresh, local, seasonal ingredients prepared in a way that enhanced what the earth had already provided. Since then, she’s focused on providing the cleanest, most sustainable food available; only partnering with people as serious as she is about protecting our ecosystems and fixing a broken food industry. Eilo’s approach to food makes it delicious, but served out of a charmingly renovated Airstream, it’s also fun to eat.
