As a Fallbrook native and a fixture in fine dining restaurants throughout Southern California, Chef Carlo Guardado is steeped in the flavors of our unique bioregion. After years of cooking to acclaim at places like Ballast Point, the Ace Hotel & Swim Club, and Playground (recognized by the New York Times for “most beautiful dishes of the year”), Chef Carlo was drawn back to the country by the memory of abundant local produce. His vision for cooking from the source at the source resulted in a series of pop-up dinners, which grew into Small Town Kitchen, a carefully curated farm-to-table café whose rigorously seasonal menu shifts with the offerings of local farmers and producers.
