Grilled Peach Pizza

Grilled Peach Pizzas on a plate.
Indulge in a sweet pizza this summer with this recipe created by our friend, Chef David Pratt.
Ingredients
any fresh cheese, like mozzarella
shaved garlic
basil
extra virgin olive oil
5 lbspeaches
salt
5 lbshard white flour, but any 00 flour or
high-protein flour works well
¼ ozyeast bloomed in ½ cup 112ºF water
1½ ozsalt
7 cups cold water

Mix dough of flour, yeast, salt, and water for 5 minutes, then let rest for
20 minutes before mixing for another 5 minutes. Rest overnight in a tight fitting plastic bag. Shape balls next morning or 30 minutes before using. 

Cut peaches in half and place face down on a hot grill until seared.
Remove and set aside. 

Gently press out dough into the desired pizza shape. Add olive oil, garlic, cheese, and peaches to your pizza. Bake on oven deck, or highest heat standard oven, for 5 minutes or until the dough has reached the desired color. Season, slice, and serve. 

Optionally, add any seasonal fruit like figs, shaved garden vegetables, or thin-sliced cured meat.
