Broccoli raab is a delicious and slightly bitter Italian vegetable. It is closely related to broccoli, but its narrower stems and leafy greens can be cooked together without as much preparation. It can stand alone as a side dish, as part of an antipasto platter, or be tossed into a pasta.

This varietal is known by a multitude of names, such as spring raab, broccoletto, sprouting broccoli, rapini, and many more. Despite these names, spring raab is more closely related to the turnip than to broccoli. It has slim stems, loose florets, and an earthy sweetness that blooms when grilled or sautéed.
