Japanese Cucumber Salad

Refreshing crisp cucumber paired with umami flavor for a refreshing and quick salad.

This simple cucumber salad is an incredibly easy last-minute dish to put together for any summer gathering or even just a quick lunch. The unique flavor combinations are not commonly found in most western barbecue culinary palettes and will be an interesting twist to add to your next party or picnic.

Ingredients
2cucumbers
2 tbspblack sesame seeds
1 tbsptamari (soy sauce)
1 tbspsesame oil
1 tbsprice vinegar
1 tbspminced garlic
1 tbspminced ginger
cilantro
Slicing cucumber thing using a mandolin.

Using a mandolin, slice the cucumbers into thin slices (or use a sharp knife). Place them into a colander and sprinkle a good amount of salt. Leave for 15 minutes.

Patting cucumbers dry in colander.

Rinse and pat dry. This step helps remove excess liquid from the cucumber. Toast the sesame seeds in a pan for a couple of minutes. Dress the cucumbers and top them with the sesame seeds and some chopped cilantro. Enjoy this salad as is or chilled!
