In 2016, we gathered around the table for ten delicious, intentional meals celebrating farmers and chefs leading the sustainable food movement.
The Ecology Center’s Community Table Accord is an initiative that unites chefs, farmers, and community members towards a more vibrant food system. The Accord is organized around 10 Principles for a Regenerative Food System, created in collaboration with culinary leaders who have been a part of our community for many years.
Throughout 2016, we paired a chef and a farmer who exemplified one of these principles and hosted a dining experience that truly told the story of our food from farm to fork. In addition to next-level cuisine, each dinner offered a space for community education and dialogue around the challenges and solutions inherent in our food system.
This extraordinary series was documented to create a one-of-a-kind cookbook. This book will be a celebration of a year’s worth of incredible dinners, but more than that, it is a deep exploration into the current state of our food landscape including growing, sourcing, and consumption, with an eye toward a hopeful future.
This book puts a powerful tool for positive change in the hands of many. By taking an in depth, but wholly accessible, look at the Community Table Accord’s 10 Principles, we’re able to use local leaders as evidence that an abundant food future is not just possible, it’s happening right now in communities everywhere. Those involved range from high profile local chefs and small farmers to the legendary chef and farm-to-table leader, Alice Waters.
